Burmese Mango Salad & Burmese Noodles

Here are two Burmese recipes that my mom made recently, thanks to the instructions from my cousin.  It's called "thayet chin thohk" (pronounced as "the-yet-di-dok") and "khao sw thohk" (pronounced as "kao-swe-dok") in Burmese, both are a very refreshing recipe for the summer.


Thayet Chin Thohk (Mango Salad)

Ingredients:

1 green mango, peeled and shredded
1/2 cucumber, shredded
2-3 leaves of cabbage, finely sliced
1 shallot, finely sliced
1 tbsp dried shrimp paste
1 large handful of shredded dried shrimp
fish sauce, grounded palm sugar, and lemon juice to taste

Directions:

Incorporate the shrimp paste into the shredded mangos.  (Use your hands for best results.)  Hand mix everything else into #1.  Season to taste.





Khao Sw Thohk (Burmese Noodles Salad)

Ingredients:

2 cakes of egg noodles
1-2 handfuls of lightly blanched bean sprouts
1/2 small purple onion / 2-3 shallots, finely sliced
1 small potato, boiled and sliced
2-3 leaves of cabbages, thinly sliced or shredded
1 tomato, sliced
2-3 cloves of garlic, chopped and fried in oil
2-3 shallots, sliced and fried in oil
2 hard boiled eggs, peeled the shells and sliced
1 tbsp of soy bean powder (黃豆粉)
2 large handfuls of shredded dried shrimp
1/2 ladle of tamarind sauce  (we made our sauce from the dried tamarind pods)
fish sauce, and lime juice to taste
(optional) shredded cooked chicken breast or sliced fish cakes or prawns, halved

Directions:

In a large mixing bowl, incorporate all the ingredients into the noodles.  (Use your hands for best results.)  Season to taste.
